Tomato Basil Catfish Recipe Ingredients:- 4 Catfish Fillets - about 4oz each
- 2 tablespoons Olive Oil
- 1 Medium Green Bell Pepper - chopped
- 1 Medium Onion - chopped
- 2 Cloves Garlic - chopped
- 1 - 14oz can Chicken Broth
- 1 - 14.5oz diced Tomatoes
- 1/2 teaspoon Dried Oregano
- 1/2 teaspoon Dried Basil
- 1/2 teaspoon Pepper

Tomato Basil Catfish Recipe Instructions:In a large skillet, heat the olive oil over medium heat. Add bell pepper, onion and garlic and sauté for 2-3 minutes or till translucent. Add chicken broth, tomatoes, oregano, basil and pepper. Bring to the boil and cook for 2 minutes. Reduce heat to medium-low. Place catfish fillets over the sauce, cover and simmer for 8-9 minutes or till the fish flakes easily with a fork. Serve over rice and garnish with lemon wedges.
