Cod with Orange and Walnuts Recipe Ingredients:- 4 Cod Cutlets
- 50g Butter
- 75g Fresh Breadcrumbs
- 1 Garlic Clove - finely chopped
- 25g Walnuts - finely chopped
- finely grated rind and juice of 1 Orange
- Salt and Freshly Ground Black Pepper

Cod with Orange and Walnuts Recipe Instructions:Preheat the oven to 375°F (190°C) Gas Mk 5. Melt the butter in a saucepan, and stir in the breadcrumbs, garlic, walnuts and orange rind. Simmer over low heat, stirring from time to time, until the breadcrumbs have absorbed the butter. Arrange the cod in a buttered ovenproof dish and season to taste with salt and pepper. Pour over the orange juice, then cover with the breadcrumb mixture. Bake in the oven for 20-30 minutes until the fish is tender.
