Crayfish Salad Brandy Recipe Ingredients:- 1 Green Crayfish
- 1 tablespoon Olive Oil
- 1 tablespoon Butter
- 2 Cloves Garlic
- 1 Small Onion - finely chopped
- 1/2 cup Brandy
- 1/2 cup White Wine
- Tomato Purée
- Pinch Cayenne Pepper
- Knob Butter
- chopped Parsley
- Salad - of your choice

Crayfish Salad Brandy Recipe Instructions:Kill the crayfish by either freezing, drowning or stabbing it, then split it in half lengthwise. Remove intestine and guts. Heat oil and butter in a frypan, then place the crayfish meat-side down and cook for a few minutes. Turn over and continue to cook until the shell starts to turn red. Add the garlic and onion, continue to cook for a few minutes, then flame with the brandy. Once the flames have died down, add the white wine, tomato purée and a pinch of cayenne pepper and simmer for 10 minutes. Transfer the crayfish to warm plates. Boil the sauce to reduce and thicken. Season with salt and pepper, then stir in a knob of butter. Pour the sauce over the crayfish and scatter over the parsley.
