Haddock in Herb Marinade Recipe

Haddock in Herb Marinade Recipe Ingredients:
  • 400g Haddock Fillets
  • 2 tablespoons Sunflower Oil

    For The Marinade:
  • 1 Small Onion - finely chopped
  • 2 Cloves Garlic - finely chopped
  • 1  - 15g pack Herbs for Stuffing - finely chopped
  • 6 tablespoons Olive Oil
  • Juice and zest of 1/2 Lemon

Serves: 4

Haddock in Herb Marinade Recipe Instructions:

  • For the marinade
    blend all the ingredients together and pour over the haddock fillets, cover and leave to marinate in the refrigerator for 30 minutes.
     

  • Heat the oil in a large frying pan.
     

  • Remove the fish from the marinade and cook for approximately 4-5 minutes on each side.
     

  • Add the remaining marinade to the pan and cook gently for 5 minutes.
     

  • Serve on a leafy salad with new potatoes or noodles.
