Lemon Poached Haddock Fillets Recipe Ingredients:- 4 Haddock fillets - about 200g each
- Salt and Pepper - to taste
- 2 Large Lemons - thinly sliced
- 3 Garlic Cloves - thinly sliced
- 1/4 cup Water
- 4 teaspoons Olive Oil
- 2 tablespoons Lemon Juice
- 1/4 teaspoon Ground Coriander
- 3 tablespoons Blanched Almonds - sliced
- Fresh Parsley - to garnish

Lemon Poached Haddock Fillets Recipe Instructions:Preheat the oven at 230ºC (450ºF). Cover the bottom of a baking pan with lemon slices and garlic. Place 2 fish fillets; cover with lemon slices and garlic. Place 2 fish fillets on top; sprinkle with pepper. Mix the water, olive oil, lemon juice and coriander; pour over the fillets. Cover with foil. Bake 10 minutes per 2.5 cm ( 1 in.) of thickness, 20 to 25 minutes or until the fish is opaque. Grill the almonds. Garnish with almonds and parsley.
