Encrusted Halibut Recipe Ingredients:- 4 Halibut Fillets - about 175g each
- 2 Egg - beaten
- 175g Walnuts - finely chopped
- Salt and Pepper
- 2 tablespoons Olive Oil
- 300ml Double Cream
- 1 tablespoon freshly chopped Tarragon
- 2 tablespoons Dry Marsala

Encrusted Halibut Recipe Instructions:Season the fish with salt and pepper then dip them into the egg and then into the crushed walnuts to coat on all sides. Heat the oil in a large frying pan, add the fish and sauté for about 3 minutes on each side or until cooked through, turning several times during the cooking. Meanwhile, in a small saucepan, bring the cream and tarragon to a simmer and continue to simmer until it reduces and thickens slightly. Add the Marsala and whisk well to incorporate. To serve - transfer the fish to a serving platter and and drizzle the sauce over the fish.
