Lemon Halibut Soup Recipe Ingredients:- 1 kg Halibut Steaks
- 1 litre Water
- 1 tablespoon White Wine Vinegar
- 2 Bay Leaves
- 16 Prunes - stoned and quartered
- 1 tablespoon Butter
- 1 tablespoon Flour
- juice of 1/2 Lemon
- 1 tablespoon Sugar
- Salt - to taste

Lemon Halibut Soup Recipe Instructions:Add the water to a pan along with the vinegar, bay leaves and a little salt. Bring to a boil then add the halibut, reduce to a simmer and cook gently for about 10 minutes, or until the fish is cooked through and just beginning to come off the bones. Strain the majority of the stock into a clean pan and add the prunes then bring to a boil. Set the pan with the fish (and about 250ml stock) aside to keep warm. Combine the butter and flour into a smooth paste then whisk into the soup stock to thicken it. Allow the mixture to thicken for about 8 minutes then season with lemon juice and sugar as well as salt and black pepper. Serve the fish on a plate and accompany with bowls of the prune soup.
