Recipe Jack Mackerel Ingredients:- 1 - 15oz can Jack Mackerel - reserve juice
- 1 Large Egg
- 2 slices Light Wheat Bread - toasted
- 1/4 cup Onion - minced very fine
- Salt and Pepper - to taste

Recipe Jack Mackerel Instructions:In a bowl, mix mackerel with egg, onion, salt & pepper. Tear the toast into very small pieces and stir into mixture. Should be a similar texture as raw meat loaf. If it is too dry, add a splash of the reserved fish liquid or milk. Form into 4 large patties. Spray non-stick pan with cooking spray and fry over medium to medium-high heat until browned on both sides and cooked through.
