Bucatini with Monkfish Recipe Ingredients:- 4oz Monkfish
- 3oz Fresh Pasta - a thick spaghetti
- 1oz Yellow Onion - chopped
- 1 Clove Garlic - minced
- 1 Anchovy - chopped
- 3oz Fresh Tomato - chopped
- 2oz Olive Oil
- Flour
- 1 teaspoon Dried Hot Chili Pepper - crushed
- 3oz White Wine
- 1 tablespoon chopped Fresh Mint
- 1 tablespoon chopped Fresh Parsley
- 3oz Fish Stock

Bucatini with Monkfish Recipe Instructions:Heat olive oil until very hot. Slice monkfish lengthwise, and then slice into cubes. Coat fish cubes lightly with flour and add to olive oil. Sauté about one minute on each side. Add garlic and onion. Cook one minute then add anchovy. When onion and garlic browns add white wine and stir. Add fish stock and bring mixture to boil. Add fresh tomatoes, mint, parsley and hot chili pepper. Lightly salt and pepper. Simmer for 5 minutes. While sauce is simmering, cook fresh pasta according to package instructions. Drain pasta and add to sauce and toss.
