Pollock Bake with Spinach and Tomatoes Recipe Ingredients:- 6 Pollock Fillets - about 6oz each
- 2 cups Fresh Spinach - chopped
- 1/4 cup chopped Onion
- 2 cups Crushed Tomatoes
- Salt and Pepper - to taste
- 1/2 cup Parmesan Cheese

Pollock Bake with Spinach and Tomatoes Recipe Instructions:Preheat oven to 350 degrees. On stove, sauté onions, spinach and crushed tomatoes until the onions are softened. Spray baking pan with cooking spray and arrange fillets in a single layer. If the fillets are large, cut them into portion size pieces. Spoon tomato mixture over fish, top with parmesan cheese and bake for 25 minutes.
