| Salmon Ranch Recipe | Salmon Ranch Recipe Ingredients:- 1/2 lb Salmon Fillets
- 2 teaspoons Margarine
- 1¼ teaspoons minced Garlic
- 2 tablespoons Fat-Free Ranch Dressing
- 1/4 teaspoon Lemon Herb Seasoning
- Ground Black Pepper
- 1/4 cup Quick Cooking Brown Rice
- 1/2 cup sliced Mushrooms
- 1 cup Asian Style Frozen Vegetable Mix
- 1 Green Onion - thinly sliced
- 1 tablespoon sliced Almonds

| Salmon Ranch Recipe Instructions:Preheat the oven to 400°F. Coat an 8" x 8" baking dish with cooking spray. Rinse and dry the salmon and arrange the fillets skin-side down in the prepared baking dish. Spread 1 teaspoon of margarine on each salmon fillet. Sprinkle the fillets with 1/4 teaspoon of the garlic, followed by the ranch dressing. Top by sprinkling with lemon-herb seasoning and pepper to taste. Bake for 15 minutes, or until the thickest part of the fillet flakes easily with a fork. While the salmon is baking, cook the rice according to the package directions, and set it aside. While the rice is cooking, heat a non-stick skillet over medium heat and cook the mushrooms, vegetable mix, and the remaining garlic for 5 minutes, or until soft. Add the vegetable mixture to the cooked rice, along with the green onion and almonds, and stir to combine well. Cover and keep warm. Serve with the salmon
