Sweet and Sour Sardines Recipe

Sweet and Sour Sardines Recipe Ingredients:
  • 5 Large Fresh Sardines - cleaned, cut in half
  • 1 cup All Purpose Flour
  • 1/4 cup olive oil - for frying

    Marinade
  • 1/3 cup Olive Oil
  • 1 Large Red Onion - thinly sliced
  • 1 Carrot - cut into very small cubes
  • 2 Bay Leaves
  • 2 tablespoons Raisins
  • 1 Small Chili - finely chopped
  • 5 tablespoons Rice Vinegar
  • 3/4 cup Dry White Wine
  • 1 tablespoon Pine Nuts - toasted
  • 1 teaspoon Granulated Sugar

Sweet and Sour Sardines Recipe Instructions:
  • Season the sardines with salt and freshly ground pepper.
     

  • Dredge sardines in flour and shallow fry in olive oil until crisp on both sides starting with skin side down. Arrange them in a single layer in a shallow dish.

    Marinade:
    Heat 1/3 cup olive oil in a separate pan and fry the onion, carrot, bay leaves, raisins, and chili until the vegetables are soft.
     

  • Add the vinegar, wine, pine nuts and sugar. Mix well and then pour the marinade over the warm fish.
     

  • Allow to cool, and place in the refrigerator. Allow to marinate for a few hours before serving.
