Sweet and Sour Sardines Recipe Ingredients:- 5 Large Fresh Sardines - cleaned, cut in half
- 1 cup All Purpose Flour
- 1/4 cup olive oil - for frying
Marinade - 1/3 cup Olive Oil
- 1 Large Red Onion - thinly sliced
- 1 Carrot - cut into very small cubes
- 2 Bay Leaves
- 2 tablespoons Raisins
- 1 Small Chili - finely chopped
- 5 tablespoons Rice Vinegar
- 3/4 cup Dry White Wine
- 1 tablespoon Pine Nuts - toasted
- 1 teaspoon Granulated Sugar

Sweet and Sour Sardines Recipe Instructions:Season the sardines with salt and freshly ground pepper. Dredge sardines in flour and shallow fry in olive oil until crisp on both sides starting with skin side down. Arrange them in a single layer in a shallow dish.
Marinade: Heat 1/3 cup olive oil in a separate pan and fry the onion, carrot, bay leaves, raisins, and chili until the vegetables are soft. Add the vinegar, wine, pine nuts and sugar. Mix well and then pour the marinade over the warm fish. Allow to cool, and place in the refrigerator. Allow to marinate for a few hours before serving.
