| Smoked Trout Recipe | Smoked Trout Recipe Ingredients:- 2 Dressed Whole Rainbow Trout - about 10 oz each
- 2 cups Wood Chips
- Cooking Spray
Brine: - 3 cups Boiling Water
- 1 cup Packed Brown Sugar
- 1/2 cup kosher Salt
- 1/2 teaspoon Freshly Ground Black Pepper
- 3 Sprigs Fresh Thyme
- 2 Orange Rind Strips - about 4 inch each

| Smoked Trout Recipe Instructions:To prepare brine: Mix 3 cups water, pepper, thyme, sugar, salt and rind in a large bowl stirring until sugar and salt dissolve. Place water mixture and fish in a large baking dish. Cover and refrigerate overnight. Soak wood chips in water for 1 hour and drain well. Prepare grill for indirect grilling, heating one side to medium-high and leaving one side with no heat. Pierce bottom of a disposable aluminum foil pan several times. Place pan on heated side of grill and add wood chips to pan. Remove fish from brine, rinse with cold water and pat dry. Use cooking spray to coat grill rack. Place fish, skin side down on unheated side. Cover and grill for 15 minutes or until fish flakes when tested with a fork easily. Remove skin.
