Smoked Trout Recipe

Smoked Trout Recipe Ingredients:
  • 2 Dressed Whole Rainbow Trout - about 10 oz each
  • 2 cups Wood Chips
  • Cooking Spray

    Brine:
  • 3 cups Boiling Water
  • 1 cup Packed Brown Sugar
  • 1/2 cup kosher Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 3 Sprigs Fresh Thyme
  • 2 Orange Rind Strips - about 4 inch each

Smoked Trout Recipe Instructions:
  • To prepare brine: Mix 3 cups water, pepper, thyme, sugar, salt and rind in a large bowl stirring until sugar and salt dissolve.
     

  • Place water mixture and fish in a large baking dish. Cover and refrigerate overnight.
     

  • Soak wood chips in water for 1 hour and drain well.
     

  • Prepare grill for indirect grilling, heating one side to medium-high and leaving one side with no heat.
     

  • Pierce bottom of a disposable aluminum foil pan several times. Place pan on heated side of grill and add wood chips to pan.
     

  • Remove fish from brine, rinse with cold water and pat dry.
     

  • Use cooking spray to coat grill rack. Place fish, skin side down on unheated side.
     

  • Cover and grill for 15 minutes or until fish flakes when tested with a fork easily. Remove skin.
