Trout Brunch Recipe Ingredients:- 6 Small Fresh Trout - cleaned, with heads removed
- 3 Lemons
- 1 teaspoons Fresh Ground White Pepper
- 6 teaspoons Rosemary
- Salt
- 1 cup Dry White Wine
- 1 cup Fish Stock
- 1 tablespoon Butter
- 1/2 cup finely chopped Onion

Trout Brunch Recipe Instructions:Wash trout and pat dry. Make 2 to 3 diagonal cuts into each fish. Gently rub trout using half a lemon and season inside and out with salt and pepper to taste. Sprinkle 1 teaspoon of rosemary in the cavity of each fish. Use a shallow skillet to simmer wine, stock, butter and onion. Add the fish and simmer for further 12 to 15 minutes. Place skillet in the refrigerator for 1 hour until cool. Remove fish carefully from liquid and remove skin. Place fish on paper towels in a dish and cover with foil or plastic film. Refrigerate liquid separately. The following day, pour 1 teaspoon of the liquid over fish.
