Trout Fillets with New Potatoes Recipe Ingredients:- 500g Rainbow Trout Fillets
- 500g New Potatoes
- 1/2 Red Onion - chopped
- 50g Butter
- 3 tablespoons Crème Fraiche
- 1 tablespoon Lemon Juice
- 1 Clove Garlic - crushed
- 3 tablespoons Chives and Parsley - chopped
- 1 Salt and Pepper

Trout Fillets with New Potatoes Recipe Instructions:Slice the potatoes and place in cold, salted water bringing to the boil slowly. Melt 25g of butter in a frying pan, add the onions and cook until soft then add garlic and cook for 1 minute further. Cut fillets lengthways in half and cook on each side for 2 min. Season the fillets to taste then remove from the pan and keep warm. Put crème fraiche and three quarters herbs in the pan and add lemon juice. Season and stir until thickened. Drain potatoes, add butter and half of the herb sauce and mix well. Serve 3 half fillets on each plate with potatoes and garnish with remaining sauce.
