Sprinkle salt and pepper inside and outside the trout.
Crush together the garlic and thyme creating a paste and put some in each fish. Put one bay leaf inside each fish then wrap 2 slices of bacon around each of them.
Arrange all fish in a large, oiled baking dish. Sprinkle with melted butter and bake for 10 to 15 minutes checking the bacon and fish are cooked. Baste the fish as they cook.
Serve fish on a warm serving platter and garnish with lemon juice and parsley.
